Little Pillows of Joy: Olive Oil Lemon Rosemary Bites

I ask, “will they bring you joy?” The response will be, “they are little pillows of joy! That means we get to keep them!”

I know it has only been a few weeks since I started actually creating recipes for donut holes. But did I tell you I bought the baked donut pans over a year ago? This means, I’ve been imagining recipes for donuts for much longer. Good things come to those who wait, right? Well, low and behold the donut recipe I’ve been talking about with anybody who was interested in something that might come out of my kitchen for like 3 months! The minute they came out of the oven, the combination of lemon zest, peppery olive oil and rosemary wafted in the air. Of course, one pillowy donut hole rolled out of the mold, by accident…cough…right when I placed the pan on the cooling rack. I had the sugar at the ready and dusted that runaway pillow of joy and savored it. NOM. Oh…”what are those little rings of joy”, you wonder? OH. Well I AM GLAD YOU ASKED! I was wondering what these little pillows of joy might taste like if I sprinkled in a little sea salt and I wonder how I’d recognize one bundle of joy from another? That’s when I took out the tiny little donut ring pan! Those ones got laced with a little sea salt before baking. THEN they were dusted with a little sugar after!

Whichever your pleasure, savory and sweet or sweet, savory and sweet, I think both are perfect and they’ll be in the NYC lineup next to a chocolate number I’m working on next! I’m on a donut hole roll!
