Coconut X 3 and Chocolate X 2 - Tiger Swirled Coconut Cacao Chip Mini Bundts

When one of my first NYC bread and cookie testers and cherished confidantes, told me she saved up all day knowing I was making a cookie delivery to her office’s afternoon party just after she savored a shop the chocolate girl chewy oatmeal chocolate chip cookie and rosemary sea salt baton and raved about them, my heart was filled with happiness. Then she asked me, do those have dairy? Then my heart sank…then I had to tell her all the cookies and breads she’s eating has dairy. THEN she said…Oh. THEN I said, there’s some things I used to make that have olive oil or some other oils. I just haven’t made them in a while. But I promised I’d think about it and I’d make her a few things to try.

WELL, it was just last week when she told me she couldn’t have dairy and my heart was bruised and fractured by the experience; I couldn’t take it! So here we have my personal favorite mini bundts - the double coconut chocolate chips, deconstructed then mashed together with my former glorious tiger olive oil pound cake. These delectables swirl together the perfect symphony of coconut milk, coconut oil, chipped coconut, cacao powder and chocolate chips. On my first try, I think these are perfect! As per usual, I haven’t written it down. But I think these are a keeper! I must write this one down! I can’t wait for Andrea to taste these!
